I wanna share the details on this product. When I got more experienced with cheesemaking, I took on some new varieties. 

I discovered there were some that I couldn’t just vacuum pack (like my first parmesan style which is the one in the picture). 

Parmesan style needs two months in the cheese cave at 85-95% humidity before vacuum packing. 

The only problem was my converted beverage cooler had the right temp, not the right humidity. 

Why convert the entire fridge for a few varieties?  

Nope! How about individual cheese cave environments when needed? 

YES! 
 
That’s why I designed and created this product. 

It has a mounted hygrometer for real time humidity readings, and vents on the top and bottom to control airflow. Finally, I have included a water container specifically sized for providing the right amount of moisture to keep the target of 85-95%. 

You are in complete control of the humidity environment for this cheese! Adjust airflow and water to keep a perfect environment while the rest of your cheeses age in their vaccum packs. 

You can leave this system unattended for several days without concern.
